Lil Mac’s Smokey Fish Quesadilla
Lil Mac's Smokey Fish Quesadilla Cajun recipe is a delicious fusion of Cajun and Mexican flavors. Ingredients
- 1/2 orange bell pepper
- 1/4 cup green onion
- 6 ounce Daigle’s sweet pecan garlic
- 1 bag shredded mild cheddar
- 1 bag shredded colby jack
- 2 cheddar jalapeño wraps
- 1 container fresh pico de gallo
- Cajun Boy Seasoning to taste
- 3 tablespoons olive oil
- Guacamole w/pico
- Pam
- sour cream
Instructions
- Season fish with 4oz of the Daigle’sLine grilling basket with foil and spray with Pam. Place fish on grill basket with space between each. Grill over charcoal for 10-12 minutes. Do not over cook!!
- Cut onions into rings (fajita style)Cut bell peppers into stripsSauté vegetables in 2 tbs. olive oilAdd rest of Daigle’s when vegetables start to get limp. Season to taste!Set aside
- Oil one side of each tortilla with remaining olive oil. Spray Pam on a pizza pan. Put one tortilla with oiled side down on pizza pan. Spread half bag of each cheese. Spread half onion & bell pepper mix. Spread half container of pico. Spread fish evenly then spread remaining onion & bell pepper mix then remaining pico, then remainder of cheese. Top with 2nd tortilla oiled side up.
- Bake at 350 degrees for 15 minutes. Flip and bake another 15 minutes.
- Be very careful when flipping, I use another pizza pan and put it on top then flip the whole thing.
- Let Quesedilla rest for 15 minutes before cutting.
- Cut into wedges, Garnish with Guacamole, sour cream, & green onion, enjoy!
